Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12A-12-4    High Priority - Employee switched from working with raw food to ready-to-eat food without washing hands. -Observed employee cracked raw shell eggs and then touch sliced cheese and clean plate for customer order, no glove change or hand wash in kitchen. **Warning**

03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Observed cream cheese (50-52°F - Cold Holding) on prep table in wait station. -Observed corn beef hash (69°F - Cold Holding) on prep table in Kitchen. -Observed coleslaw, tuna salad, potato salad, sliced cheeses (46 F - Cold Holding) in flip top make table across from cook line in kitchen. Employee states all foods held in unit since 7:30 am, instructed to immediately move all foods to coolers for storage. **Warning**
03F-01-5    High Priority - Time/temperature control for safety food held using time as a public health control marked with a time that exceeds the 4-hour limit. -Observed no time stamp for TPHC for pancake batter, raw shell eggs and pasteurized eggs. **Warning**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. -Observed sausage links/patties (89-107- Hot Holding) at grill Station in kitchen. Employee states holding since 7:30 am, instructed to reheat to 165 F. **Warning**
