Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-20-5    Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed both ice machines outside on 1st floor soiled inside. Observed 2nd floor soda ice bin soiled.
14-01-5    Basic - Bowl or other container with no handle used to dispense food. Observed plastic cup used to scoop oats. Operator removed cup. **Corrected On-Site**
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed and confirmed employee beverage on prep table in both kitchens. Operator removed. **Corrected On-Site**
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed by Dish wash machine and beverage station.
14-11-4    Basic - Equipment in poor repair. Observed torn gasket in 1st floor and 2nd kitchen reach in cooler and Reach in freezer. Observed hole in cooler door on first floor.
36-22-4    Basic - Floor area(s) covered with standing water. Observed upstairs by Dish wash machine.
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed under cooking equipment , coolers and freezers on 1 floor and 2 floor
36-17-5    Basic - Floor tiles missing and/or in disrepair and/or in disrepair. Observed floor tiles cracked upstairs kitchen.
08B-38-4    Basic - Food stored on floor. Observed box of oil on floor in 2nd floor kitchen upstairs. Operator moved to dry storage. **Corrected On-Site**
33-19-4    Basic - Garbage on the ground and/or pad around dumpster.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed soiled gaskets on all coolers and freezers soiled. Observed floor fans soiled with grease and dust. Observed both air conditioner soiled with grease and dust.

14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. Observed both upstairs and 1 floor kitchen reach in cooler rusted shelves. Educate person in charge on the importance of repeat violations **Repeat Violation**
24-18-4    Basic - Silverware/utensils stored upright with the food-contact surface up. Observed cooking utensil stored with food contact surfaces unprotected. First floor kitchen.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed in both kitchens. Both operators moved wet cloths to sanitizer bucket. **Corrected On-Site**
08A-14-5    High Priority - Raw animal food not separated from ready-to-eat food during preparation. Observed raw scrambled eggs over uncovered diced mango. Chef placed raw Scrambled eggs underneath cut mango. **Corrected On-Site**
41-10-4    High Priority - Toxic substance/chemical improperly stored. Observed on counter next to food in 1st floor kitchen. Operator moved sanitizer. **Corrected On-Site**
41-27-4    High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed sanitizer bucket solution over 200ppm Manager corrected 100ppm **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed soda nozzles soiled on 2nd soda machine. Observed soiled cutting boards throughout establishment.
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed on first floor kitchen.
53B-14-5    Intermediate - Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed expired certificates for some employees operator has books on site.
