Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

33-31-5    Basic - Unnecessary items/unused equipment on the premises. Observed 2 reach in cooler not working located by the sushi bar. **Repeat Violation**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw shrimp (51°F - Cold Holding); scallops (50°F - Cold Holding); as per operator less than 30 minutes he placed food on ice. **Corrective Action Taken**
52-03-4    Intermediate - Establishment advertised crab on menu/menu board but served imitation crab. Observed on the online menu: 305 Roll, Orange Dragon Roll, Red Dragon Roll, crab with avocado salsa salad as per owner made with imitation crab and posted as crab stick without advertise that these plates are made with imitation crab. Observed on physical menu Kani-su as per owner made with imitation crab and posted as crab stick without advertise that these plates are made with imitation crab. **Admin Complaint**

Observed on the online menu: Spicy tuna salad, tuna tataki, tuna tower, usu-Zukuri, tuna lover, salmon lover, sashimi combo, sushi combo, hosamaki combo, sushi with sashimi combo, key west roll, salmon mango roll, 305 Roll, ocean beach roll, salmon temptation, sunset roll, Japanese bagel roll, California roll, spicy tuna roll, tuna lover roll, tuna su, Naruto salmon, sake su, sushi appetizers, tuna tower, tuna sashimi appetizer, as per owner made with raw fish, there is no consumer advisory on the online menu. Observed on the regular physical menu: Spicy tuna salad, tartar tuna, tuna tower, tuna tataki, usu-zukuri, kani su, sake su, tuna su, naruto salmon, naruto tuna, tuna roll, salmon roll, avocado roll,sushi appetizer, tuna sashimi as per owner made with raw fish, this food is no marked with and asterisk or any other specification that let the customers know that these plates are raw or under the consumer advisory.
