A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - One Dead rodent present - upstairs storage room in corner next to coconut powder. Storage room contains food in jars, bags of flour, coconut powder, cashews and dry goods. Operator removed and cleaned/sanitized the area. **Warning**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Bar dish machine- chlorine 0ppm. **Repeat Violation** **Warning**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Approximately 3 small flying insects on wall above prep area near Cookline. Operator removed flies and cleaned/sanitized the area. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
Raw fish stored over cooked lamb in left Cookline flip top. Operator stored all items properly. **Corrected On-Site** **Repeat Violation** **Warning**
High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature.
Raw chicken stored over raw shrimp in walk in cooler. Operator stored all items properly. **Corrected On-Site** **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found.
Approximately 35 droppings in upstairs storage room. Storage room contains food in jars, bags of flour, coconut powder, cashews and dry goods. Operator began cleaning during inspection. **Warning**
High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed.
Cookline - chlorine over 200ppm. Operator made new solution. Chlorine 100ppm. **Corrected On-Site** **Warning**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked.
Cooked lamb in walk in cooler - per operator cooked 2 days ago. Operator properly date marked. **Corrected On-Site** **Warning**
