Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed above dish pit, buildup of dust in ceiling vent.
08B-38-4    Basic - Food stored on floor. Observed liquid egg cases on floor in Walkin freezer . Manager corrected by removing. As a repeat violation the importance of following proper protocol with this violation was reinforced with the manager. **Corrected On-Site** **Repeat Violation**
33-19-4    Basic - Garbage on the ground and/or pad around dumpster. Observed tire, pallets, and other debris behind dumpster on ground.
10-01-5    Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed handle in waffle mix bin. Manager removed. **Corrected On-Site**
33-11-4    Basic - Missing drain plug at dumpster. Observed one of the dumpster missing a drain plug.
36-50-4    Basic - Unclean building components, attachments or fixtures. Observed buildup of grease on hood filters on cooks line.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed 0ppm Chlorine in Dishwashing machine. Operator called for service and will manually sanitize in Three compartment sink until repaired.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed egg whites 45° and Egg mix 44°F in Reach in cooler on line for less than 2 hours. Manager placed pans on ice in Reach in cooler. **Corrective Action Taken**
