Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03D-01-5    High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Observed a deep container with cooked chicken at 2:13 pm (124°F - Cooling)rechecked at 3 pm same temperature, per operator cooling for approximately 1 hour. A deep container with cooked mole sauce at 2:10pm (132°F - Cooling)rechecked at 3 pm same temperature. Per operator Cooling for approximately 15 minutes. At the current cooling rate all products will not cooled to 70°F within 2 hours. Operator transferred products to shallow pans. **Corrective Action Taken**
35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed around 40 live small flying insects on dry storage landing on flour , sugar , black beans and several clean utensils. Operator discarded Flour, Sugar and black beans.
14-31-5    High Priority - Nonfood-grade bags used in direct contact with food. Observed bread on direct contact inside a thank you to go bag on cook line. And raw beef inside a thank you to go bag inside walk-in freezer. Operator transferred product to a food graded bags **Corrected On-Site**

Observed an overstocked container with raw shrimp (46°F - Cold Holding) inside flip top cooler on cook line Observed a deep container with shredded cheese at (46°F cold holding) on ice bath on cook line. Per operator products stored for approximately one hour.
