Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - -Interior of oven/microwave has accumulation of black substance/grease/food debris.
-Observed walk in cooler shelving soiled with encrusted food debris in kitchen.
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items.
-Observed employee backpack stored on chest freezer in kitchen.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
-Reach in cooler lowboy cooler gaskets soiled throughout cook line in kitchen.
Basic - Single-service articles not stored inverted or protected from contamination.
-Observed styrofoam to go containers not inverted stored on shelf next to front counter make table in kitchen.
High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit.
-Observed utensils stored in standing water 74-76 F throughout front counter make table, prep table next to flat top grill in kitchen.
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.
-No chlorine test strips available at time of Inspection.
