Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use ice scoop stored on soiled surface between uses.
-ice scoop outdoors in bucket with water, insects and single use glove on ice machine. **Corrected On-Site**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
-grease build up on hood filters.
-inside walk-in cooler fan cover soiled.
-mold-like substance on outside of unopened commercially packaged blue cheese dressing in outside walk-in cooler.
Basic - Single-service articles improperly stored.
-case of cardboard food trays stored on floor in outside storage room.
-cases of cups on floor in office. **Corrected On-Site**
High Priority - Operating with an expired Division of Hotels and Restaurants license.
-per operator, letter has been sent with check for $50, no military discount. **Admin Complaint**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
-ground beef in cook line 43-50 less than 1 hour. Drawer not closing properly. Product stocked from walk-in cooler earlier. Operator moved product to different cooler for temperature recovery. **Corrective Action Taken**
Intermediate - Establishment advertised a specific fish on the menu/menu board but served another type of fish.
-menu states fish and chips made with haddock, due to supply issues operator has switched to cod. Operator emailed webmaster to remove specific fin-fish species from menu. **Admin Complaint**
