Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

16-55-4    Basic - Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dish machine not dispensing chlorine sanitizer at time of inspection. **Warning**
14-10-4    Basic - Equipment or utensils not designed or constructed in a durable manner. Observed torn gaskets on kitchen salad prep cooler next to steam table. **Warning**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Observed on back doo4 of kitchen **Warning**
36-01-4    Basic - Floor not cleaned when the least amount of food is exposed. Observed under and around cooking equipment under the hood exhaust system, sauté, fryer and flattop station. **Warning**
10-01-5    Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed in bin containing split peas. **Warning**
22-08-4    Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed interior and exterior of microwave oven next to stock pot station. **Warning**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed under Food preparation table next to ice maker. **Warning**
35B-03-4    Basic - Outer openings not protected with self-closing doors. Observed at back door of kitchen. **Warning**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed at the bar. **Warning**

31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed condiment containers stored in kitchen hand washing sink next to dish machine, operator rearranged at the time of the inspection. **Corrected On-Site** **Warning**
