Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-54-4    Basic - Uncovered food stored near sink exposed to splash. Fish and chicken raw in ice bins right next to Handwash sink. Operator placed up a barrier. **Corrected On-Site**
21-03-4    Basic - Wet wiping cloths stored in detergent and sanitizer mixed together. On bottom shelf across from ice bin. Operator changed to just sanitizer. **Corrected On-Site**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed 0ppm. 35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed 1 flying in kitchen landing on silver pan holding raw chicken.

03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. chicken (47°F - Cold Holding); fish (46°F - Cold Holding); beef (48°F - Cold Holding); salsas (47°F - Cold Holding); ranch (47°F - Cold Holding); butter (50°F - Cold Holding); in walk in cooler. Observed 1 fan not working but 2 fans were. Temped the largest piece of meat in cooler 43°F. Operator moved all items to the freezer and beer walk in cooler.
