Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

13-02-4    Basic - Employee with ineffective hair restraint while engaging in food preparation.
08B-47-4    Basic - Food not stored at least 6 inches off of the floor. -Observed box of butter vegetable oil on floor in dry storage area in kitchen. Person in charge removed from floor. **Corrected On-Site**
36-24-5    Basic - Hole in or other damage to wall. -Observed wall in disrepair next to pizza oven in kitchen.
22-16-4    Basic - Reach-in cooler interior/shelves have accumulation of soil residues. -Throughout kitchen.
08B-12-5    Basic - Stored food not covered. -Observed marina sauce not covered, stored on prep table across from three compartment sink in kitchen. Person in charge covered sauces with lids.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Observed marinara sauce (62°F - Cold Holding); chicken tenders (85°F - Cold Holding) on prep table across from ware wash area in kitchen. Person in charge states holding less than 4 hours, moved to walk in cooler to chill and store. **Corrective Action Taken**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb.
53A-01-7    Intermediate - Manager or person in charge lacking proof of food manager certification.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. -Observed no soap or hand towels at hand sink next to reach in cooler in kitchen. -Observed paper towel dispenser inoperable at hand wash sink in ware wash area.
53B-05-5    Intermediate - Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. -Observed all employee training expired on 8/2020.
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. -Observed spray bottle holding kitchen cleaner without proper labeling in ware wash area in kitchen.
