Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Observed at rear door near bath room.
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. Observed at kitchen hand wash sink. I will print operator sign.
08B-12-5    Basic - Stored food not covered. Observed beans in dry storage not covered. Operator covered the beans. **Corrected On-Site**
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. Observed raw shelled eggs above unwashed tomatoes,parsley,and pepper. Operator place on lower shelf. **Corrected On-Site** **Repeat Violation**
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. Observed approximately 3 live roaches on bag of rice , 5 live roaches on liquid fry oil, one at rear door. Operator killed roaches and sanitized area.
41-10-4    High Priority - Toxic substance/chemical improperly stored. Observed glass cleaner and methanol gel fuel stored with black beans and salt,and evaporated milk can.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed at outside mop sink.
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed plastic container in hand wash sink in kitchen. Operator removed. **Corrected On-Site**
02C-04-5    Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed pork that was frozen and now in refrigerator without proper date mark the food when it is thawed and held at refrigeration temperatures again..
