A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored on floor. Observed buckets containing pork lard stored on the kitchen floor. Observed box containing raw shell eggs stored on the walk-in cooler floor. **Corrected On-Site**
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed in the walk-in freezer. **Repeat Violation**

21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed in the kitchen. **Corrected On-Site**
22-49-4    High Priority - Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine strength at 0ppm. Operator called service technician and set up 3 compartment sink. **Corrective Action Taken**
08A-02-6    High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed raw beef above cooked tofu,duck located in the prep reach in cooler,kitchen. **Corrected On-Site**
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken feet with raw pork located in the reach in cooler opposite the ice machine. **Corrected On-Site**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
