Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floors, walls and/or ceilings soiled/has accumulation of debris.
Floor under fryers, grease and debris
Floor under front counter, debris.
Wall at handwash sink at cook line.
Fan covers in walk-in cooler have build up. **Repeat Violation**
High Priority - Employee switched from working with raw food to ready-to-eat food without washing hands.
Employee on cook line handled raw chicken, then handled basket, removing cooked chicken from fryer. Employee did not wash hands and change gloves between task. Manager spoke to employee. **Corrective Action Taken**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged.
In reach-in freezer on cook line, containers of raw chicken stored over popcorn shrimp. Manager moved chicken. **Corrected On-Site**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
In chub unit near dish area, mac and cheese (112°F - Hot Holding); red beans (107°F - Hot Holding); gravy (117°F - Hot Holding). Employee stated items were heated, unit was boiling so she turned off. Manager turned unit back on.
In holding unit at front line, mac and cheese (108°F - Hot Holding). Manager discarded. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
Hot water hose bibb at mop sink missing backflow preventer. Manager called maintenance man to supply. **Corrective Action Taken**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Nozzles on soda dish at drive thru have mold-like substance .
Intermediate - Handwash sink not accessible for employee use at all times.
Handwash sink at cook line, bulk filter powder container in front of sink. Manager moved container. **Corrected On-Site**
