Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-17-5    Basic - Floor tiles missing and/or in disrepair and/or in disrepair. Observed approximately 3 floor tiles crack and one floor tile missing by vegetables walk in cooler door.
14-69-4    Basic - Ice buildup in reach-in freezer located by the prep area. **Repeat Violation**
22-08-4    Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed reach in cooler gasket soiled.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. **Repeat Violation**
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Throughout the kitchen and prep area.
03D-02-5    High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. Observed rice pudding (48°F - Cooling); cooked red bean (47°F - Cooling); cooked pork (46°F - Cooling)as per owner pork was prepared yesterday night.

Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. 22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Cutting board soiled.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed plastic container stores inside hand washing sink by prep area. Operator removed it. **Corrected On-Site**
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked pork stored inside walk in cooler with date marked, as per owner cooked chicken was prepared Sunday afternoon.
