A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed walk-in cooler with rust putting surface of shelves. **Warning**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Observed 3 cans of Vanilla pudding (Wt. 7 pounds Each) dented heavily or along seams, Observed 2 cans of Thick Soy Sauce (Wt. 5.25 pounds) bulging at top and bottom end. **Repeat Violation** **Warning**
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee use bare hand to dress fish with vegetables for service on buffet line.
