Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-03-4    Basic - Cove molding at floor/wall juncture broken/missing. Cove missing in doorway by water heater
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed a personal beverage container on the baking table by the triple sink. Worker moved the beverage container to the employee personal items area. Another beverage is on the preparation table beside the ice machine. Next to ice buckets and a container of cold brew coffee. 36-17-5    Basic - Floor tiles missing and/or in disrepair and/or in disrepair. Metal covering is lifting on the ramp into the walk-in refrigerator.
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Thermometer absent from the milk refrigerator under the blender counter.
51-18-6    Basic - No copy of latest inspection report available. Only available electronically. Operator printed copy for availability to guests. **Corrected On-Site**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed food debris buildup in the door gaskets of refrigerators **Repeat Violation**
36-10-4    Basic - Worn, torn and/or soiled floors/carpeting. Observed blackened buildup and debris under equipment **Repeat Violation**
22-53-4    High Priority - Quaternary ammonium sanitizer used to sanitize clean in place equipment not at proper minimum strength. Do not use equipment not properly sanitized. Observed sanitizer bucket measure less than 150 ppm using the color change chart for comparison of the test strip placed into the sanitizer in the towel bucket at the front counter. Buckets were changed and measure 300 ppm. **Corrected On-Site**
29-37-4    High Priority - Spray hose at dish sink lower than flood rim of sink. Observed the overhead sprayer hanging into the triple sink and below the flood rim when hanging freely. **Repeat Violation**
41-10-4    High Priority - Toxic substance/chemical improperly stored. Observed a spray bottle of Dawn Power Dissolver on the blender table behind the ice cream dipping cabinets. Digestant Deodorizer at the triple sink beside boxes of single use spoons.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed a splitter on the mop sink faucet. One is connected to a chemical dispenser with integral backflow preventer. The other side is connected to a submersible hose and lacks an additional backflow preventer.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed a cleaning bottle brush in the hand washing sink by the ice machine. Brush was removed from the hand washing sink and placed at the dirty end of the triple sink. **Corrected On-Site**
53B-01-5    Intermediate - No proof of required state approved employee training provided for any employees.
