Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Nonfood-grade bags used in direct contact with food. Observed bags of frozen corn, frozen carrot in non food grade bags located in the freezer. Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup in reach in freezers located at the back door area.

Observed onions, pimento, Cobb salad dressing with Mayo and chipotle dressing dated 9/01- 9/17 see Stop sale. Stop Sale issued due to food not being in a wholesome, sound condition. 22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dish machine chlorine sanitizing solution at 0ppm. Operator corrected to 100ppm.
08B-02-4    High Priority - Displayed food not properly protected from contamination. Observed dulce de leche in reach in cooler located at front counter and ice cream not covered at front counter.
12A-13-4    High Priority - Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee washing dishes handling dirty to clean dishes. Operator had employee clean and sanitize dishes **Corrected On-Site**
22-40-4    High Priority - Quaternary ammonium sanitizer in spray bottle not at proper minimum strength. Observed quaternary ammonium spray solution at 100ppm. Operator corrected to 200ppm.

02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed orange juice opened on Monday per Operator without date marking. Operator labeled product. **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed interior of coffee maker located at front counter with mold like substance.
