A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bathroom located inside establishment not completely enclosed with tight-fitting, self-closing doors. Observed at the employee's restroom inside the kitchen not self closing door. **Warning**
Basic - Cleaned and sanitized equipment or utensils not properly stored. Observed a box of plastic lid stored on the floor in dry storage area. Advised, the staff removed the box. **Corrected On-Site** **Warning**
Basic - Food not stored at least 6 inches off of the floor. Observed food items on the floor inside the walk-in freezer. Advised, the operator removed the items. **Corrected On-Site** **Warning**
Basic - Insect control device installed over food preparation area. Observed bug zapper stored above food shelf with sauces below by the bar walk-in cooler. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at one of the cooler by the cook line, sausages (53°F - Cold Holding); squids (54°F - Cold Holding); raw chicken (54°F - Cold Holding); chicken wings (52°F - Cold Holding). Advised, the chef mentioned they just put everything in this morning. They moved all items to another cooler. **Corrective Action Taken** **Warning**
Intermediate - Handwash sink not accessible for employee use at all times. Observed sanitizer bucket stored inside the hand wash sink. Advised, the staff removed the bucket. **Corrected On-Site** **Warning**
Intermediate - Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Observed hand sink removed at the new kitchen area. **Warning**
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. No chlorine test strip. **Warning**
