Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-12-5    Basic - Employee drinking from an unenclosed beverage container in a food preparation/clean dishware area and the container does not have a dispensing mechanism to prevent hand contact with lip contact area of drink container. 32-04-4    Basic - Women Bathroom located inside establishment not completely enclosed with tight-fitting, self-closing doors. **Warning**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw chicken over Yuca at walk in cooler. Manager moved the raw chicken. **Corrected On-Site** **Warning**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed portioned raw chicken (45°F - Cold Holding); portioned raw fish (48°F - Cold Holding) at reach in cooler preparation area. As per manager for less than two hours. Operator added ice for rapid cooling. **Corrective Action Taken** **Warning**
29-34-4    High Priority - Vacuum breaker missing at hose bibb at mop sink. **Warning**
41-15-5    High Priority - Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed chlorine sanitizer solution at +200ppm. Manager added water. Final concentration 100ppm. **Corrected On-Site** **Warning**

Observed chicken salad, Tuna salad not dated marked at ceviche station. And beans at walk in cooler. As per manager for more than one day. **Warning**
53B-14-5    Intermediate - Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed 17 employees training certificates expired on July 2021. **Warning**
