Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored improperly. Cases of bottled drinks. Also, employee food in box with potatoes and on shelf with bottled drinks. Moved all. Also, pork in walk in cooler is not covered. **Corrected On-Site** **Repeat Violation**
33-20-4    Basic - Grease on the ground and/or pad around grease receptacle. Behind back door. Also, build up of trash on ground near shed and dumpster.
10-18-5    Basic - In-use utensil stored in sanitizer between uses. Two spatulas at hibachi. Also, ice buckets not inverted. Tongs on fryer handles, knife between reach in coolers. All were corrected during this inspection. **Corrected On-Site**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Cabinet under fountain machine. Around gaskets of reach in make table. **Repeat Violation**
12B-13-4    Basic - Opened employee beverage container in a cold holding unit with food to be served to customers. Bottle of Pepsi over onions in reach in cooler. Opened Gatorade on shelf over make table. Drink on top of reach in freezer. Drink next to bottles of juice. All were moved. **Corrected On-Site** **Repeat Violation**

12A-28-4    High Priority - Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Male employee touched apron and hat and continued to work without washing hands.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. In walk in cooler: pans of raw chicken stored on shelf over imitation crab meat, mushrooms, cooked pork onions, and raw pork; pan of raw shrimp on shelf over pan of krab meat. All were moved. In reach in cooler: pan of raw pork stored over pan of cooked pork. Moved. In walk in freezer pan with raw beef and pan of raw chicken stored over raw fish. Manager moved all.
