Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed dust accumulation on air vents located throughout kitchen area. **Warning**
Basic - Cutting board has cut marks and is no longer cleanable located at kitchen prep cooler located next to handwash sink near warewashing area. **Repeat Violation** **Warning**
Basic - Equipment in poor repair. Observed torn reach in cooler gaskets at prep cooler located next to cookline/flat top grill at kitchen area. **Warning**
Basic - Food stored on floor. Observed boxes containing individual sauce/dressing containers labeled Olive oil and lemon stored on floor of walk in cooler. **Warning**
Basic - In-use knife/knives stored in cracks between pieces of equipment located between cookline and prep cooler at kitchen area. Chef removed knife stored between equipment. **Corrected On-Site** **Warning**
Basic - Label on a food item prepared and packaged onsite for customer self-service does not include product identity/description, date product was packaged and name and address of the establishment that prepared and packaged the food. Observed prepared and packaged containers of yogurt, fruit cups, orange juice and lemonade located at display cooler next to cash register for self service lacking proper labeling and must be labeled as outlined above. **Warning**
Basic - No handwashing sign provided at a hand sink used by food employees, observed at both handwash sinks located next to reach in coolers at kitchen prep area. **Warning**
Basic - Stored food not covered. Observed loafs of bread and croissants stored uncovered on top shelving above bread slicer at kitchen area. **Warning**
Basic - Wet mop not stored in a manner to allow the mop to dry. Observed wet mop stored in mop bucket, not in use, located in front of mop sink at kitchen area. **Warning**
High Priority - Nonfood-grade bags used in direct contact with food. Observed ginger stored inside regular grocery "Thank You" bag inside walk in cooler. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cream cheese (52°F - Cold Holding); tuna (52°F - Cold Holding); sliced smoked turkey (53°F - Cold Holding) located inside walk in cooler at kitchen area. **Warning**
Intermediate - Handwash sink used for purposes other than handwashing. Observed blender stored in handwash sink at back counter near coffee/espresso station. **Warning**
Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager/. Observed establishment open to the public at the time of inspection with 4 food employees engaged in food preparation such as preparing salads, sandwiches and beverages and engaged in food service of approximately 10+ customers with no food manager present upon arrival. **Warning**
