Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-20-5    Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed interior ice machine has mold like growth on the surface.
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed no ambient thermometer provided inside reaching cooler used for milk.( in room dining kitchen)
25-05-4    Basic - Single-service articles improperly stored. Observed coffee filters stored on top of the coffee machine in the server area.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry Observed mop stored inside mop bucket in dishmachine room.
35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed three flying insects on the service line in the front area near the grill,Chef will notify stewarding department.
02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed silk milk not date marked stored inside the reach in cooler.(in room dining) Manager dated the product. **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed large white cutting board has green stains on the surface also black stains located on the reach in cooler on cookline.
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed knife stored inside hand wash sink located in the kitchen area, Manager removed. **Corrected On-Site**
31B-05-4    Intermediate - Paper towel dispenser at handwash sink not working/unable to dispense paper towels. Observed paper towels not able to dispense at hand wash sink located in the butcher room.
