A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas. Observed ceiling tiles near hoods above cooks line. As a repeat violation the importance of following proper protocol with this violation was reinforced with the manager. **Repeat Violation**
Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup in chest Reach in coolers proximal to Three compartment sink. As a repeat violation the importance of following proper protocol with this violation was reinforced with the manager.

Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed handle in bulk products such as corn starch, flour, sugar, and msg. Operator corrected by removing utensils. **Corrected On-Site**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed grease buildup on hood filters and mold like substance on Reach in cooler gaskets on cooks line. Observed Walkin cooler shelves with buildup of debris.
Basic - Single-service articles not stored inverted or protected from contamination. Observed some to go containers on cooks line and aluminum pans in dry storage not inverted. Operator corrected by inverting. **Corrected On-Site**
Basic - Time/temperature control for safety food thawed in an improper manner. Observed shrimp, pork, and chicken defrosting on sink and in sink with no running water. Operator moved products where water could be running. **Corrective Action Taken**
