Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed in the walk-in cooler, milk (50°F - Cold Holding); butter (50°F - Cold Holding); burgers (49°F - Cold Holding); cooked octopus (49°F - Cooling), walk-in ambient temperature 49°F. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed in the parents flip top cooler, cobia fish stored over salad dressings and sauces. The manager rearranged the itemsfor proper storage. **Corrected On-Site** **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
1. In the left side flip top cooler, cole slaw (45°F). Per the manager the item was prepared approximately one hour prior. Item moved to the lower portion of the cooler to quick chill. **corrective action taken**
2. Observed in the walk-in cooler, milk (50°F - Cold Holding); butter (50°F - Cold Holding); burgers (49°F - Cold Holding); cooked octopus (49°F - Cooling), walk-in ambient temperature 49°F. Per the manager all items were received or prepped today, within the last two hours. All items either moved to working beer cooler with ambient temperature or coved with ice to quick chill. **Corrective Action Taken** **Warning**
Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed octopus at 49°F cooling in walk-in cooler that was at 49°F ambient temperature. Ice added to octopus to quick chill. **Corrective Action Taken** **Warning**
Intermediate - Handwash sink used for purposes other than handwashing. Observed scallops being thawed in the hand wash sink under running water and squeeze bottle lids in a container of water. The manager removed the scallops and lids. **Corrected On-Site** **Warning**

Intermediate - Spray bottle containing toxic substance not labeled on the cook line. Per the manager the item was bleach. Manager removed the bottle to proper storage and labeled. **Corrected On-Site** **Warning**
