A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
1. In the left side flip top cooler, cole slaw (45°F). Per the manager the item was prepared approximately one hour prior. Item moved to the lower portion of the cooler to quick chill. **corrective action taken**
2. Observed in the walk-in cooler, milk (50°F - Cold Holding); butter (50°F - Cold Holding); burgers (49°F - Cold Holding); cooked octopus (49°F - Cooling), walk-in ambient temperature 49°F. Per the manager all items were received or prepped today, within the last two hours. All items either moved to working beer cooler with ambient temperature or coved with ice to quick chill. **Corrective Action Taken** **Warning** - From follow-up inspection 2021-07-03: 1. Left side flip top - Coleslaw 44°F. Manager voluntarily discarded all TCS food in cooler. Do not store TCS food in cooler until it can maintain temperatures at 41°F.
2. Walk-in cooler -No TCS stored in cooler. Ambient temperature 44°F.

Intermediate - - From initial inspection : Intermediate - Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. **Warning** - From follow-up inspection 2021-07-03: Observed same. **Time Extended**
