Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed fan covers soiled in walk in cooler. **Repeat Violation**
36-03-4    Basic - Cove molding at floor/wall juncture broken/missing. Observed broken cove molding next to steam table.
50-09-4    Basic - Current Hotel and Restaurant license not displayed. The license was displayed. **Corrected On-Site**
12B-12-5    Basic - Employee drinking from an unenclosed beverage container in a food preparation/clean dishware area and the container does not have a dispensing mechanism to prevent hand contact with lip contact area of drink container. Observed an open cup full of tea next to the grill. Employee discarded cup. **Corrected On-Site**
13-07-4    Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed employee engaged in preparing food wearing jewelry.

31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. In coffee station and in bar area.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed storage shelves rusted and soiled, next to reach in coolers by three compartment sink and gaskets soiled in walk in cooler.
22-16-4    Basic - Reach-in freezer interior have accumulation of soil residues. Observed reach in freezer next to three compartment sink with ice buildup.
25-06-4    Basic - Single-service articles not stored inverted or protected from contamination. Observed to go containers not inverted at preparation table. **Repeat Violation**
08B-12-5    Basic - Stored food not covered. Observed cooked pork, ribs, chicken pork soup, beef stew stored un covered in the walk-in cooler.
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Observed pork shoulder, beef, ribs and chicken Thawing at room temperature inside three compartment sink. Operator moved the food to the walk-in cooler. **Corrective Action Taken**
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. **Repeat Violation**
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. Observed leaking water spigot at three compartment sink.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. **Repeat Violation**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wet towels not stored in sanitizer solution at prep table next to grill.
14-06-4    Basic - Wood food-contact surface not properly sealed. Observed not sealed wood used as shelve lining inside the walk-in cooler.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed containers of rice removed from original package not labeled in storage area. **Repeat Violation**
22-45-4    High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed pans and containers not being sanitized after washing. As per employee they use only soap without sanitizing.
10-05-5    High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit. Observed in use utensils stored in water at 82°F. Operator moved the container on the grill to reheat the water to 135°F. **Corrective Action Taken**
14-31-5    High Priority - Nonfood-grade bags used in direct contact with food. Observed French fries and yuca inside at non food grade bag at reach in freezer.
08A-02-6    High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed raw beef over vegetables in reach in freezer, by three compartment sink.
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. Observed raw eggs stored over vegetables in the walk in cooler. Employee moved eggs to bottom shelve. **Corrected On-Site**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw chicken over ready to eat cooked pork in walk in cooler.
12A-09-4    High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed an employee mop the floor and changing to prepare food at cook line without changing the gloves. Employee was coached with the correct procedures. Employee discarded the gloves and washed their hands. **Corrected On-Site**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked onions (120 - Hot Holding) at shelf above of grill. Operator moved the product to the grill to be reheating to 165°F. **Corrective Action Taken**
41-10-4    High Priority - Toxic substance/chemical improperly stored. Observed a bottle of chemical stored on top of reach in freezer next to three compartment sink. Operator moved the chemical under three compartment sink. **Corrected On-Site**
29-42-4    High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed hand washing sink in coffee station used for soiled utensils.
27-06-4    Intermediate - No hot running water at three-compartment sink. Observed hand washing sink next to three compartment sink no hot water available.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper on hand washing sink at bar area. **Repeat Violation**
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products. At time of inspection.
31B-03-4    Intermediate - No soap provided at handwash sink. Observed no soap on hand washing sink at bar area. **Repeat Violation**
53A-14-4    Intermediate - Person in charge unable to answer basic Food Code questions pertaining to safe operation of establishment. Observed person in charge not able to answer questions pertaining to employee health standards, the big 6 food borne illnesses, and thermometer calibration.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed meats, soups, ribs, meat stew stored in walk in cooler not labeled. As per employee, food was prepped two days ago. Operator date marked the products. **Corrected On-Site**
