Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Spoons by steam well not inverted.
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. In wait station and on cook line. Both discarded. **Corrected On-Site**
36-12-4    Basic - Floors not constructed to be easily cleanable. Floors throughout kitchen not sealed and collecting water. **Repeat Violation**
14-69-4    Basic - Ice buildup in reach-in freezer. Sliding door freezer on cook line.
10-12-5    Basic - In-use ice scoop stored on soiled surface between uses. On top of smaller ice machine.
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. Wet towel under red cutting board on cook line.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Shelving in walk in cooler heavily soiled. Fan guard heavily soiled as well.
33-16-4    Basic - Open dumpster lid.
36-30-4    Basic - Wall not smooth, nonabsorbent and easily cleanable in food preparation, food storage, warewashing areas or bathroom. Paint peeling in walk in cooler, wall no longer smooth and easily cleanable.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, mold-like substance and/or dust. Wall behind grill soiled with grease, hood filters soiled also. Wall by dish machine soiled with mold-like substance.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Two unlabeled bulk bins by rice cooker
35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Two live flies in kitchen. **Repeat Violation** **Admin Complaint**
01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. One gallon of homemade ranch made at 10:30 per manager, 50°F at 2:30. Manager discarded.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Pork 44-45°F, Wings 46°F, raw chicken 44°F, corn 44°F, potatoes 46°F, scrap meat 49°, prime rib 45°F. All items in walk in cooler. One gallon of homemade ranch made at 10:30 per manager, 50°F at 2:30. Manager discarded ranch. 03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Chicken in steam well 128°F, reheated to 156° by end of inspection. **Corrective Action Taken**
03E-03-5    High Priority - Time/temperature control for safety, commercially processed food reheating for hot holding not heated to a minimum temperature of 135 degrees Fahrenheit in all parts. Queso 106°F at 2:15pm, reheating for 30 minutes. 124°F at 4:00pm. Queso moved to direct heat. **Corrective Action Taken**
03D-15-4    Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Prime rib left to cool at room temp, 120°F at 2:20, at 3:40 101°F. Moved to walk in freezer.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Cutting board on cook line stained.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Hand sink in bar area used as dump sink, ice in hand sink. **Repeat Violation**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. No paper towels at hand sink in back prep area, no hand wash sign at hand sink in bar area. **Repeat Violation**
