A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - - From initial inspection : High Priority - 1.) Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed tuna salad, clam chowder, cooked ribs, butter sticks, baked potato, sliced tomatoes, mango salsa, milk, sliced cheese, cream cheese, sour cream, marinara, cheese sauce, cooked potatoes, feta cheese, sausage gravy all cold holding at 12:40 pm. Per operator, held in unit overnight and not moved. Observed ambient temperature of unit at 49°F. Advised operator to not store any TCS foods in unit until it can maintain at 41°F and below. Operator contacted technician for service.

2.) Observed Reach In: raw clams (45°F - Cold Holding) Per operator; held in unit over 4 hrs. Operator transferred to reach in freezer to quick chill. Per operator, clams served steamed. Advised operator to cook off.
3.) Observed Walk In Cooler: raw philly meat (47°F - Cold Holding); raw burger patties (48°F - Cold Holding); raw chicken (44°F - Cold Holding); raw ribs (60°F- Cold Holding); raw calamari ( 47°F- Cold Holding)at 12:10 am. Per operator, held in unit overnight and not moved. Advised operator to cook off raw animal proteins. **Warning** - From follow-up inspection 2021-07-14: 1.) Observed deli ham, roast beef, turkey breast, butter sticks, heavy cream cold holding at 44-45°F in walk in cooler. Observed ambient temperature of unit between 41-48°F. Operator stated technician was out today and adjusted thermostat. Advised operator to continue to not store any TCS foods in unit until it can maintain at 41°F and below. Operator stated will be replacing unit and in process of replacement.

2.) Observed raw scallops and raw shrimp 38°-39°F.
3.) Observed walk in cooler: raw chicken at 44°F. Advised operator to cook off raw animal protein. **Admin Complaint**
