Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Cove molding at floor/wall juncture broken/missing. Observed approximately 10 missing wall tiles by the back door in the warewash area. **Repeat Violation**
Basic - Time/temperature control for safety food thawed in an improper manner. Observed raw fish thawed in standing water in the prep area. Inspector discussed proper thawing methods with the operator. During the inspection, operator open faucet for appropriate thawing method. **Corrected On-Site**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed 4 flies by front counter not touching food. Observed 1 fly on top of single service items located by from counter. Observed1 fly on top of wrapped cutlery on top customer dining table. Observed 5 flies in the kitchen area and 2 on top of cutting board by the back door in the kitchen.
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shell eggs stored above precooked cod fritters stored inside walk in cooler. Operator moved the raw shell eggs to bottom shelf of the cooler. **Corrected On-Site**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed all cutting board soiled in the kitchen area. **Repeat Violation**
