Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Ice machine in prep area has black mold-like substance on sides by deflection plate.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
Employee drink on ice machine. Manager discarded. **Corrected On-Site**
Basic - Floors, walls and/or ceilings soiled/has accumulation of debris.
Floor at fryers soiled.
Fan covers in walk-in cooler soiled.
Ceiling and vents at cook line, dust and food debris. **Repeat Violation**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged.
In reach-in cooler at cook line, open bags of raw shrimp stored over fries. Manager moved shrimp to,bottom shelf.
Also, in walk-in cooler, raw shrimp stored over pan lids and raw chicken stored over buns. **Corrective Action Taken** **Admin Complaint**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
Outside mop sink missing backflow preventer on cold water hose bibb. **Repeat Violation** **Admin Complaint**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
No paper towels at handwash at cook line. Manager supplied napkins.
No paper towels at both restroom handwash sinks. **Corrective Action Taken**
