A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Employee on cook line, no hair protection.
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Cups at drink station. **Repeat Violation**
08B-36-4    Basic - Food stored in a location that is exposed to splash/dust. At handwash sink in drink station, salt shakers stored under towel dispenser. Person in Charge moved shakers. **Corrected On-Site**

06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Multiple containers at triple sinks thawing in standing water.

08B-56-4    High Priority - Food stored in ice used for drinks. At drink station, container of cut lemons stored in ice bin. Person in Charge removed container.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Can opener at server station, blade has build up. Soda guns at bar have build up. **Repeat Violation**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. At drink station, metal scrub pad stored in sink. Person in Charge removed scrub pad. **Corrected On-Site**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Person in Charge used handwash sink at bar to clean soda gun equipment. Inspector spoke to Person in Charge,,she stopped using handwash sink. **Corrective Action Taken** **Repeat Violation**
53A-01-7    Intermediate - Manager or person in charge lacking proof of food manager certification. Person in Charge stated she has Certified Food Manager certification but is not able to provide certificate. 7 employees present at time of inspection.
