Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. On front cook line make table and in front of charbroiler.
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. In back prep area on shelf over steam table in back prep line.
08B-49-4    Basic - Employee personal food not properly identified and segregated from food to be served to the public. Employee food in beer cooler behind bar stored over beer and garnishes. Employee removed food. **Corrected On-Site**
36-17-5    Basic - Floor in disrepair and/or in disrepair. Hole in floor in drive thru area.
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. In Walk in freezer on floor.
33-16-4    Basic - Open dumpster lid.
25-06-4    Basic - Single-service articles not stored inverted or protected from contamination. To go containers not inverted on cook line above fryers.
29-49-6    Basic - Standing water in bottom of reach-in-cooler. On front cook line.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. On front cook line and by hand washing sink on cook line. Employee made sanitizer solution and put wiping cloths in sanitizer bucket.
21-07-4    Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. 200ppm plus employee corrected to 75ppm. **Corrected On-Site**
35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. 3 flies landing on beer cooler in outside bar area. 1 fly hovering in bar area beer cooler. **Repeat Violation**
08A-02-6    High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. -Raw shrimp over cheeses curds and donuts in Walk in freezer. Not all commercially package. -Raw comminuted beef stored over sliced ham and turkey in reach in cooler on cook line. Employee moved to lower shelf. **Corrected On-Site**
35A-04-4    High Priority - Rodent activity present as evidenced by rodent droppings found. 6 rodent droppings in on shelf in first aid kit near drive thru, 3 rodent droppings on Counter next to register in drive thru, 1 rodent dropping on shelf under counter in drive thru, 2 rodent droppings behind counter in drive thru on floor, 2 rodent droppings on the floor in front cook line area, 2 rodent droppings in small bar area, 2 rodent droppings in large bar near soda fountain, 1 rodent dropping between coolers in big bar area, 8 rodent droppings in buffys kitchen area.
41-10-4    High Priority - Toxic substance/chemical improperly stored. Spray bottle of cleaner on shelf next to salt and pepper packets. Employee removed spray bottle. **Corrected On-Site**
41-15-5    High Priority - Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. 200ppm plus, corrected to 75ppm.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. -Reach in cooler gaskets on front cook line with mold-like build up. -Cutting board on front line make cooler soiled. -soda gun in outside bar area by ice bin next to keg cooler soiled. -Slicer in back prep area with food debris. -interior of ice machine soiled with mold-like debris. -shake mixer head and blade soiled with dried milk substance.
