Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed all exterior of kitchen equipment soiled, hand wash sink, soap and paper towel dispenser. **Repeat Violation**
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Observed shrimp under water on three compartment sink.
33-06-4    Basic - Trash receptacles not provided where needed in establishment. Near hand wash sink.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry.
21-07-4    Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed wet wiping towel inside chlorine sanitation solutions at 200 ppm. Operator add water, recheck 100 ppm. **Corrected On-Site**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Salt,sugar container.
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed sweet plantain (113°F - Hot Holding) sweet plantain (113°F - Hot Holding) for less than 4 hours as per operator, located on buffet line.
