Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Hood filters at cookline with buildup of debris. Also, tinfoil lined shelves below steam tables with buildup of debris.
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Meatloaf thawing on prep table. Person in charge moved to appropriate location. **Corrected On-Site** **Repeat Violation**
41-07-4    High Priority - Container of medicine improperly stored. Bottle of medicine stored on shelf above maketop. Person in charge removed. **Corrected On-Site**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. At the time of inspection dishmachine testing at 0ppm. Sanitizer bucket is empty. Person in charge began setting up triple sink. **Corrective Action Taken**
08A-02-6    High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. In reach in freezer by cookline no longer commercially packaged beef stored over opened package of fries, no longer commercially packaged cooked meatloaf. 35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. Observed one live roach on the floor by the coffee station in the kitchen. 03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In reach in cooler at to go area Ranch, blue cheese (44-45F - Cold Holding). Items made in house with dairy products. Items were in proportioned to go containers stored above fill line. Other to go containers in same unit below fill line 41F. 29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing at hose bibb with splitter on side of building by dumpster. Needs one on each side. Also missing on one side of splitter at mop sink.
