Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-20-4    Basic - In-use tongs stored on equipment door handle between uses. In-use knife/knives stored in cracks between pieces of equipment. Tongs stored on oven door. Employee removed tongs. Knives storage under steam well on prep table. **Corrective Action Taken**
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Utensils at the bar in standing water at 74F. Operators removed utensils from water and placed in dish ware washing area for sanitizing. **Corrected On-Site**

21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Wet cloth stored at bar on prep table. Operator removed wet cloth from prep area. **Corrected On-Site**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Steam well clam chowder (119F - Hot Holding). Chef pulled chowder and placed on stove to reheat. **Corrective Action Taken**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Stove on cook line has build up burnt food debris. Oven on cook like has build up of food debris. Ice buckets stored on non-sanitized/dirty surfaces. Operator placed buckets in dish area for to be sanitized. **Corrective Action Taken**
02B-04-5    Intermediate - Menu contains an item made with a raw/undercooked animal food as an ingredient and description of item does not inform consumer of raw/undercooked animal food ingredient. Establishment offers Ahi Tuna seared. No consumer advisory on menu. **Warning**
