Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-49-4    Basic - Employee personal food not properly identified and segregated from food to be served to the public. Observed employee lunch and drink in the walk-in cooler stored over customer food. These were moved below. **Corrected On-Site**
08B-38-4    Basic - Food stored on floor. Observed a case of steak sauce on the floor in the kitchen. This was put on a shelf. **Corrected On-Site**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed the exterior of the dining room ice machine is soiled.
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed kitchen staff prepping cucumbers for storage in the walk-in cooler, no gloves. Gloves were then added. **Corrected On-Site**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed rice on the front line 122°F. ALSO, ragoon 109-132 on the front line. **Repeat Violation** **Admin Complaint**
41-10-4    High Priority - Toxic substance/chemical improperly stored. Observed 2 cleaning chemical bottle stored on the front line. These were moved to cleaning. **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed soda nozzles at the drive thru and dining are soiled. **Repeat Violation**
53B-01-5    Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed lack of proof of any training. **Warning**
