A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-02-4    Basic - Employee beverages in a food preparation or other restricted area. Stored without lids on shelving above clients items. **Corrected On-Site** **Repeat Violation**
08B-49-4    Basic - Employee personal food not properly identified and segregated from food to be served to the public. Employee item of bottles protein beverage stored with client items in front counter reach in cooler under espresso machine.
36-73-4    Basic - Floor soiled/has accumulation of debris. Floor drain soiled.
22-09-5    Basic - Food storage container for time/temperature control for safety food not cleaned after being emptied prior to refilling. Stainless steel pitchers used to heat milk at espresso unit, observed employee only rinse items at dump sink and place back on machine to be reused without being wash, rinsed, sanitized and air dried, corrected. **Corrected On-Site**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Gaskets soiled on make table reach in cooler units.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. **Repeat Violation**
25-05-4    Basic - Single-service articles improperly stored.1/2 size foil pans top shelf not inverted. Corrected **Corrected On-Site**
14-12-4    Basic - Utensils in poor condition. Wood crepe batter spreader used, not fully sealed and is stored in hot water between uses. Mold like substance in wood.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Behind counter top ovens.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Reading at 0 ppm , 3 compartment quart in place with test strips at 400 ppm
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Water pan holding used utensils at 97° hot holding, cook replaced water at 155° **Corrected On-Site**
02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Opened liquid egg, opened heavy cream not date marked, corrected.
16-37-1    Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. No chlorine test strip in place for dish washing machine.
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Mallory hired over 5 months no food safety training.
