Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - - From initial inspection : Basic - Observed Employee eating in a food preparation or other restricted area. Employee eating pizza next to prep table and drinking from a cup using a straw but with no lid. - From follow-up inspection 2021-08-04: Observed employee drinking in the kitchen from a screw on top drink bottle. **Time Extended**
Basic - - From initial inspection : Basic - Observed Wood food-contact surface not properly sealed used as cutting surface at prep area. - From follow-up inspection 2021-08-04: Observed no change **Time Extended**
High Priority - - From initial inspection : High Priority - Observed Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Employee returned from a smoke break and wet left hand and put on gloves.
Employee washed left hand for less than 5 seconds, did not use soap, or allow water to get warm. **Warning** - From follow-up inspection 2021-08-04: Observed employee return to kitchen, wash hands, however did not use soap, put on gloves and returned to the cook line and handle utensils and cook food. **Admin Complaint**
High Priority - - From initial inspection : High Priority - Observed Employee used the bathroom and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands upon returning to employee area. Inspector advised employee to wash hands correctly and put on gloves. **Warning** - From follow-up inspection 2021-08-04: Observed employee return to kitchen and wash hand incorrectly. Did not use soap. **Admin Complaint**
