Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-20-5    Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed on the upper portion of the bin. Manager protected the ice and cleaned and sanitized the bin. **Corrected On-Site**
51-11-4    Basic - Carbon dioxide/helium tanks not adequately secured. Observed near the bag in a bag storage rack.
24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed on the top shelves above the cook line. Employees inverted all plates for proper storage. **Corrected On-Site** **Repeat Violation**
13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Employee acquired hair restraint. **Corrected On-Site**
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed along and behind the cook line under all cooking equipment. **Repeat Violation**
14-69-4    Basic - Ice buildup in walk-in freezer. Observed a large block of ice from drainage on the storage rack in the freezer. **Repeat Violation**
27-14-4    Basic - Self-closing metering faucet does not provide water for at least 15 seconds. **Repeat Violation**
12A-17-4    High Priority - Observed hand wash sink has self- metering device that will not stay on and must be held on, preventing proper hand washing.
03A-03-5    High Priority - Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Observed in the large flip top, shell eggs (57°F - Cold Holding). Per the employee the eggs were stocked approximately 1.5 hours ago and lid of cooler left open, as well as eggs stocked above the cold holding line. Employee moved excess eggs to walk-in cooler to quick chill and closed the lid. **Corrective Action Taken**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed on the cook line next to the clamshell grill, sausage patties (63°F - Cold Holding). Per the employee the item was placed there approximately 1.5 hours prior. Employee moved item to refrigeration to quick-chill. Retested after 30 minutes at 40°F. **Corrected On-Site**
