Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. Observed towel under cutting board on reach in cooler inside kitchen. Employee removed towel. **Corrected On-Site** **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed soiled shelf ware plates are inside kitchen.
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. Observed pipe leaking under hand wash sink by walk in cooler. **Repeat Violation**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Observed dented JALAPEÑOS can inside dry storage.
14-31-5    High Priority - Nonfood-grade bags used in direct contact with food. Observed cooked pork(CHICHARRONES) stored directly inside thank you bags inside reach in cooler by slicer inside kitchen.
29-37-4    High Priority - Spray hose at dish sink lower than flood rim of sink. Observed by dish washing machine. **Repeat Violation**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed soiled slicer blade and blade guard. **Repeat Violation**
31B-03-4    Intermediate - No soap provided at handwash sink. Observed at hand wash sink by walk in cooler.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked pork chops and cooked beef not date marked inside Walk in cooler. As per Chef both meats were cooked last Saturday January 22nd, 2022.
