A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling tile missing. Observed 2 ceiling tiles missing in back storage area near employee bathrooms. Operator stated due to air conditioning is being repaired .
Basic - Covered waste receptacle not provided in women's bathroom. Operator corrected during inspection. As a repeat violation the importance of following proper protocol with this violation was reinforced with the manager. **Corrected On-Site** **Repeat Violation**
High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed cook on line change gloves without washing hands. Educated employee and he corrected by washing hands. **Corrective Action Taken**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Butter Chips at 61F at front counter, and Sliced Cheese at 53 in reachin cooler top on cook line for approximately an hour and a half. Operator iced down product. **Corrective Action Taken**
Intermediate - Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed Eduardo without certificate. Operator ordered more books.
