Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee returned to cookline and began to put on gloves without washing hands. Stopped employee and reviewed proper procedures. 03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1) FRONT FLIPTOP UPPER - asst cream cheeses (42-56°F - Cold Holding); sliced ham (40-58°F - Cold Holding); cooked sausage (44-54°F - Cold Holding) All containers overfilled and uncovered. Per manager items in unit approximately 3 hrs. 2) smoked salmon (40-53°F - Cold Holding); sliced tomatoes (39-56°F - Cold Holding); cream cheese (40-54°F - Cold Holding); tuna salad (38-54°F - Cold Holding); egg salad (40-48°F - Cold Holding) Per manager items in line 3 hrs or less. Some items overfilled and all uncovered. Overfilled items split and moved to walk in to rechill. All other items replaced with new product and old moved to walk in to rechill. Advised manager about keeping items covered when not needed. 3) in front display case portioned butter (50-54°F - Cold Holding). Containers not under cold air flow. Per manager placed in unit approximately 2 hours.
