Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Cook stated chicken and beef had been in cooler for 4 days without being removed. Food items discarded upon request. 2. In walk in cooler queso (56°F - Cooling). 03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In stand up glass front two door Reach in cooler on cook line. raw chicken (57°F - Cold Holding); raw beef (56°F - Cold Holding); raw chicken tenders (47°F) cooked potatoes 46°F. Cook stated raw chicken and beef were moved to cooler from walk in cooler 4 days ago, and raw Chicken tenders and cooked potatoes were placed in cooler from walk in a day ago. Chicken tenders and cooked potatoes were moved to walk in freezer, and raw beef and chicken were discarded. Cooler has an ambient temperature on the top shelf of 38°F. Cooler is over stocked making it difficult to have a good airflow.
