Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Interior of ice bin, has mold like substance along the base of the deflector plate, operator had employees clean the ice bin deflector plate. **Corrected On-Site**
Basic - Bowl or other container with no handle used to dispense food.
In bulk rice container stored by dry storage shelf, plastic single service container used as scoop. Operator removed the plastic cup from the container. **Corrected On-Site**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
On main cook line shelf over flip top reach in cooler, open employee beverage stored on shelf. Operator relocated the employee beverage. **Corrected On-Site** **Repeat Violation**
Basic - Food stored on floor.
At server station in main kitchen, container of brewed tea stored on floor, operator relocated to storage shelf. At dry storage rack on opposite side of main cook line, rice stored inside of a bucket stored on floor. Operator relocated to proper storage shelf. Behind sushi bar counter, containers of ginger stored on the floor, operator relocated to proper storage level on top of empty containers. **Corrected On-Site**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
On hood filters over wok station, accumulation of grease debris on filters and hood system.
Basic - Time/temperature control for safety food thawed in an improper manner.
At three compartment sink in prep area, raw chicken cooling at ambient air in bus tub full of water. Operator relocated to three compartment sink to run under water. **Corrected On-Site**
Basic - Working containers of food removed from original container not identified by common name.
In back storage room by rear exterior door, bulk salt sugar and flour containers with no product label.
High Priority - Nonfood-grade bags used in direct contact with food.
In flip top reach in cooler on main cook line, spinach stored inside of non food grade grocery bag. Operator removed from non food grade bag and into food grade container. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged.
In walk in freezer, prepared raw beef on a stick stored over precooked packaged noodles. Operator relocated beef on a stick to proper storage level. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature.
In walk in cooler, raw shrimp stored in same container as raw chicken, operator relocated raw shrimp to separate container. **Corrected On-Site**
Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening.
In server station reach in cooler, open container of half and half opened the previous day with no date marking. Employee date marked the container. **Corrected On-Site**
