Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tile shows damage or is in disrepair.
Ceiling in outside storage room has leak, wood is in disrepair. Single service items stored in room.
Basic - Floor soiled/has accumulation of debris.
Floor at fryers have grease and food debris.
Floor in walk-in freezer has black soil residue. **Repeat Violation**
Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris.
Interior of convection ovens at biscuit prep area have black food debris on bottom plate.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Front exterior surface area of reach-in cooler at flattop.
Multiple reach-in coolers in kitchen and front line have build up. **Repeat Violation**
High Priority - Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less.
At cook line, shell eggs ambient (68F - Cold Holding). Employee stated eggs have been out for 10 minutes. Eggs placed in reach-in cooler. **Corrective Action Taken**
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb.
Hose bibb at dumpster enclosure missing backflow preventer.
Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.
Manager not able to provide any current certification. **Warning**
Intermediate - No soap provided at handwash sink.
Handwash sink in prep area missing soap. Manager stated they are waiting on delivery. Truck arrived during inspection, soap stocked. **Corrected On-Site** **Repeat Violation**
