Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Multiple locations of food and dust debris though out the kitchen area on the ceiling tiles and vents. **Repeat Violation**
14-11-4    Basic - Equipment in poor repair. Reach in cooler on cook line has a broken door and partial frame broken. Food items inside are holding temp.
36-22-4    Basic - Floor area(s) covered with standing water. Standing Water in the kitchen under the dishwashing area. Standing water in the walk in cooler.
36-17-5    Basic - Floor tiles missing and/or in disrepair and/or in disrepair. Multiple missing, broken floor tiles in walk in cooler. Broken cove molding in walk in cooler.
08B-38-4    Basic - Food stored on floor. In walk in freezer cases of fish and shrimp delivered the day prior, stored on the floor. **Repeat Violation**
36-24-5    Basic - Hole in or other damage to wall. Door to walk in freezer is disrepair. Metal is separating. **Repeat Violation**
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Knife on cook line, was stored between reach in cooler and prep counter. Person in charge ,over to correct location. **Corrected On-Site**
33-16-4    Basic - Open dumpster lid. In rear of building, lid is open. **Repeat Violation**
29-08-4    Basic - Plumbing system in disrepair. Hand wash sink on cook line no cold water, faucet not operating. hot water only is to hot to wash hands.
08B-12-5    Basic - Stored food not covered. Multiple food items in walk in cooler, cooked 1-2 days prior, placed in walk in cooler for cooling and never covered. All items covered by person in charge. Bulk rice stored in dry storage had the cover missing, person in charge covered it's foil. **Corrected On-Site** **Repeat Violation**
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. Water line under sink in dishwasher area has a leak causing water to leak onto the floor. Faucet at mop sink has a hose attached to it. Rags wrapped around it to prevent leaks. **Repeat Violation**
22-49-4    High Priority - Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine in the kitchen 0ppm at first test, person in charge changed chemicals and re primed, 50ppm at second test. Dish machine in the bar 0ppm at first test, person in charge changed chemicals and re primed, 50ppm at second test. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. Opened case of raw chicken stored over case of whole avocados. Person in charge moved to correct location. **Corrected On-Site**
16-33-4    Intermediate - Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer. Test kit kept in the office, both dish machines we not working properly.
02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Open milk in walk in cooler, person in charge stated it was open 4 days prior, and added correct date marking. **Corrected On-Site**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Hand wash sink in kitchen has a extended faucet made out of aluminum foil for other purpose.
