Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-73-4    Basic - Floor soiled/has accumulation of debris behind the prep table in the front of the kitchen. Also observed under the dry storage shelving holding potatoes and dried beans, and under the reach-in freezers in the same area. **Warning**
33-23-4    Basic - Grease receptacle/dumpster not on proper pad/nonabsorbent surface. Observed the container outside the back door of the restraint sitting on dirt. **Warning**
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. Observed at both kitchen hand wash sinks. Provided sign. **Corrective Action Taken** **Warning**
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Observed chicken placed on the three compartment sink to thaw. Per the employee the item was set out 1 hour prior. The employee placed the item in the sink under running water to properly thaw. **Corrected On-Site** **Warning**
33-31-5    Basic - Unnecessary items/unused equipment on the premises. Observed a discarded microwave and other items outside the back door of the establishment. **Warning**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust behind lower shelf the prep table in the front kitchen where clean pots, pans, and serving plates are stored. Wall soiled with excessive grease and debris above the 6 burner range. **Warning**
03D-02-5    High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. Observed in the Berg Cooler; cooked corn and potato soup (47F - Cooling). Per the employee the item was placed in the cooler yesterday around midnight. Observed the soup in a deep stock pot. 14-31-5    High Priority - Nonfood-grade bags used in direct contact with food. Observed empanadas stored in non-food grade bag in the freezer. The employee removed the items from the bag. **Corrected On-Site** **Warning**

01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. 03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the Front flip top cooler; Monterrey Jack cheese (61F - Cold Holding); ham (58F - Cold Holding); shell eggs (61F - Cold Holding). Per the employee the items were placed in the cooler 30 minutes prior. 03D-15-4    Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed in the front flip top cooler - sliced tomatoes (61F - Cooling); corn tomato salad (58F - Cooling). Per the employee the items were placed in the cooler after being prepared for 30 minutes. No TCS food in temperature in the unit and the unit does. It appear to be able to maintain food at 41°F or below. All food moved to alternate refrigeration to properly cool. **Warning**
