A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Approximately 13 rodent droppings in wait station under racks and shelving. Approximately 37 rodent droppings around mop sink next walk in freeze. Approximately 40 rodent droppings under racks in dry storage area. Approximately 55 rodent droppings under tables and along walls in dining area. Approximately 3 rodent droppings in men's bathroom. **Warning** - From follow-up inspection 2021-10-08: Observed approximately 41 rodent droppings in front of house: 12 near front wait station and 29 on bag in box sodas across from pass through window. Observed approximately 20 rodent droppings in unused cooler drawers near walk in freezer by exit door. Employees began cleaning up droppings. **Admin Complaint** **Corrective Action Taken** - From follow-up inspection 2021-10-09: Approximately 6 rodent droppings around mop sink in front of walk in freezer door. Approximately 5 rodent droppings under racks in dry storage area. One rodent dropping under steam table on cook line. Approximately 3 rodent droppings under cabinets in wait station. One rodent dropping under triple sink at bar in dining room. Approximately 6 rodent droppings throughout dining area. **Admin Complaint** - From follow-up inspection 2021-10-11: One rodent dropping under rack in small storage area in dry storage room. One rodent dropping under steam table on cook line. Two rodent droppings under cabinets at wait station. One rodent dropping under table in dish area.
