Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. **Repeat Violation**
36-17-5    Basic - Floor tiles missing and/or in disrepair. -Observed floor tile cracked throughout cook line in kitchen. **Repeat Violation**
08B-38-4    Basic - Food stored on floor. -Observed Crates holding canned sodas stored on floor behind cashier counter in dining room. -Observed buckets holding sauce/dressing stored on floor in walk in cooler. **Repeat Violation**
10-01-5    Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. -Observed multiple knives stored in between make table/steam table at cook line in kitchen. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. -Gaskets soiled throughout kitchen. -Hood filters heavily soiled throughout cook line in kitchen. **Repeat Violation**
29-08-4    Basic - Plumbing system in disrepair. -Observed hand wash sink in kitchen in disrepair, employee states plumber scheduled to repair sink later within the day.
25-05-4    Basic - Single-service articles improperly stored. -Observed single use utensils stored on floor underneath cashier counter in dining room. -Observed aluminum pans stored on shelf above wait station preparation table in kitchen. **Repeat Violation**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. -Observed wall soiled with grease residue throughout cook line in kitchen. **Repeat Violation**
35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. -Observed 1 live fly at hand wash sink behind bar counter. Instructed employee to remove fly.
50-17-2    High Priority - Operating with an expired Division of Hotels and Restaurants license. -Observed current DBPR License expired on 12/1/2021. Instructed person in charge to contact DBPR to renew license during inspection. **Admin Complaint**
01B-14-4    High Priority - Shell eggs in use or stored with cracks or broken shells. -Observed 1 raw shell egg cracked stored on shelf in walk in cooler. Cook discarded egg for compliance.
03A-03-5    High Priority - Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. -Observed raw shell eggs stored on food preparation table in kitchen. Instructed cook to properly store in lowboy cooler.
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. -Observed Fried pork, plantains (83-100F - Hot Holding) in fryer basket at cook line in kitchen. Cook states holding less than four hours, instructed to reheat foods to 165 F and hot hold at 135 F during service.
